This ethylene gas when in the package increases the ripening rate of the fresh produce hence aggravating the ripening process resulting into faster rotting of the fresh produce.
Effect of ethylene gas:
Causes physiological changes in fresh fruits, vegetable and flowers like change in texture (softening),color and other processes. Thought of as an aging hormone, ethylene gas not only influences the ripening of fruit but may also cause produce to die, generally occurring when the fruits, vegetables, flowers and plants are damaged in some manner. Other effects of ethylene gas are loss of chlorophyll, abortion of plant foliage and stems, shortening of stems, and bending of the stems (epinasty).
